What’s all the fuss about a banana pancake recipe? Jack Johnson sings about making banana pancakes on a lazy sleep-in morning in his song entitled, would you believe, “Banana Pancakes?” “I’ll make you banana pancakes; pretend like it’s the week-end now and we could pretend it all the time,” he sings to his loved one as they contemplate spending the morning with each other. I’d say you would need a good banana pancake recipe to complete this picture.
When was the last time you got to enjoy a homemade breakfast with the ones you love on a Saturday or Sunday morning? Can’t remember, huh? If you’re like most people, even your week-ends get filled up with hectic activities and you hardly ever get any down-time with your family, especially in the mornings. How’s does the thought of sharing a nice hot batch of banana pancakes sound?
Because your busy schedule may keep you from doing much cooking at home, you may think that making banana pancakes is hard. Other recipes tell you to cut the bananas into small chunks and saute them slightly in butter and sugar or honey and then either add them to the batter or add as garnish to the top of the cooked pancakes.
Cooking the pancake doesn’t have to be hard; in fact, any flat cooking surface will do. Some people prefer a flat griddle which comes in the stovetop variety or the plug-in self-contained type. Just a plain ole frying pan will work fine. Coat the surface with cooking oil, butter, or cooking spray before your pour in the batter.
Once your batter is mixed up and you know how you plan to cook it, the actual cooking of the pancake is quite simple. The procedure for cooking regular pancakes is to coat your pan with oil and heat. Then pour the batter in a circle the size you want. When it bubbles on the top, take a spatula and flip over to cook on the other side. When making banana pancakes, you will have the cook the pancake a little normal than a plain one, especially if you use fairly large chunks of banana.
